Morsel Monday: CrockPot Edition



Tonight's supper . . . light, sweet, and savory.
It's like dessert meets mom's best ever chicken-pot-pie.

Sorta.

Just hush up and trust me.



Slow Cookery with Sausage & Apples
{recipe taken courtesy of the al fresco website}
Serves 4


Ingredients:
1 16oz can of whole berry cranberry sauce
1 cup chopped sweet onions (I like vidalias)
1/2c Riesling or another sweet wine (plus extra for sipping)
1 tsp ground ginger
12oz Sweet Apple Chicken Sausage (such as al fresco's)
2 medium Granny Smith Apples, peeled, cored and sliced into thin wedges
Hot cooked brown rice


Directions:
In a slow cooker, combine cranberry sauce, wine, ginger, onions, 1/4 tsp salt and 1tsp black pepper.
Mix well.
Slice sausages on the diagonal, about 1/2" thick.
Add sausage and apple to slow cooker.
Toss well to coat.


Cover and cook on low for 7-8 hours.
Serve on individual beds of hot cooked brown rice.

  3. Gawd. Sometimes I hate not eating meat. Wonder if it'll work with Vegan Sausages?...Perhaps not that long cooking...I'm going to try it. I'll let you know. :)

  5. Oh gracious, that recipe is definitely on my to do list!

    I can't complain about my own dinner tonight though... salmon, asparagus and mashed 'taters after a lovely afternoon playing in the soil with my newly adopted roses, lavender and a few other lovelies.

    Such an excellent day.
