Thai Coconut Chicken Soup
{with lime, ginger, and cilantro}


Ingredients:

2 cartons chicken stock (or make your own using bullion)
2 cans Coconut Milk (I like the lite variety)
6" of fresh ginger root, chopped into one inch pieces
1/4 cup freshly squeezed lime juice OR
3-4" stalk of lemongrass (fresh or from a spice jar)
1 lb chicken breasts
package of plain chinese noodles
1 bunch of fresh cilantro
1/4 cup soy sauce
3 small peppers, either Thai or jalapeno, deseeded and chopped
Limes to garnish


Directions:

Fill a medium saucepan with water and bring to rapid boil. Add chicken, reduce heat, and simmer until chicken is cooked through, about 15 minutes. Remove, drain, and set chicken aside to cool.

In a large pot, combine stock, coconut milk, and soy sauce. Whisk together well and bring to an easy boil. Add the chunks of ginger and either your lemongrass stalk or the lime juice. Simmer for 15 minutes to allow flavors to combine.

Meanwhile, chop or shred chicken the cooled chicken into small pieces.
Rinse cilantro and dry with a paper towel. Chop coarsely and set aside.

Using a slotted spoon, fish out the ginger chunks and lemongrass. Discard.

Add the chinese noodles, peppers, and chicken to your broth and simmer 5 more minutes.

Rinse and drain sprouts, and slice limes into wedges.

Ladle your soup into warmed bowls. Garnish with bean sprouts and cilantro, and serve with lime wedges for extra flavor.

  2. Jess....not sure if I'm the only one having problems reading this post...all the fonts with the exception of the title are coming up as hieroglyphics of some sort...not sure why? The pics are fine...just the post text.

  5. Ooh, this sounds and looks yum. I'm a vegetarian, but I figure if I swap the chicken stock for vegetable stock and the chicken for vegetarian chicken it should be just as good! Will let you know how I get on!
