Cranberry Goodness



Sometimes I like a quiet night with The Monkey.
Oven mitts and my old apron,
candles and good music.
A rocking kitchen that smells like baking new memories
and flashbacks from my own childhood.

Lately we've been into making Cranberry Pumpkin Cookies.
And The Monkey thinks my KitchenAid mixer is his newest toy.
Mmmm.
A pumpkin-hued batter studded with bright red cranberry
and the rustic texture of chopped walnuts.


It's a challenge, cooking with him.
Anything on the spatula or left at the bowl's rim is fair game, you know.





Our recipes are often short by the end,
as we taste and test our way through each spoonful of the
perfectly fragrant
perfectly beautiful
perfectly pumpkin-y
batter.


But enough make it through for a warm ending to a cool day.
Baked up in a soft, cake-like mounds,
their mellow sweetness punctuated by bursts of tart cranberry.


Cold milk or hot tea,
{{or juice, as The Monkey prefers,}}

. . . and our evenings together couldn't be much more perfect.


Cranberry Pumpkin Cookies with Walnuts

Ingredients:
  • 1/2 cup butter, softened
  • 1 cup white sugar
  • 1 teaspoon vanilla extract
  • 1 egg
  • 1 cup solid pack pumpkin puree (I like the organic variety)
  • 2 1/4 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup fresh cranberries
  • 1 teaspoon ground cinnamon
  • 1 tablespoon orange zest
  • 1/2 cup chopped walnuts (optional)

Directions:
1. Preheat oven to 375 degrees F (190 degrees C). Grease cookie sheets.
2. In a large mixing bowl, cream butter and sugar until light and fluffy.
Beat in vanilla, egg and pumpkin. Sift together the flour, baking powder,
baking soda, salt and cinnamon; stir into mixture until well blended.
Cut the cranberries in half and stir into mixture along with the orange zest and walnuts.
Drop by teaspoonfuls onto cookie sheets.
3. Bake for 10 to 12 minutes.

Yield: Approximately 36 cookies.

  1. Sometimes life simple things are it's absolute finest!!.....those cookies look so tasty...and I'm a cranberry lover...pumpkin too! I'd probably down mine with hot co-co but I think the monkey's on to something with the juice! :)

  7. MMMMMMmmmmmmmm, they sound deelish~ I just purchased a professional KitchenAid mixer last night(early christmas to me)! In black. But Orange? I didn't see orange! I am gaga for orange.....
